Walk in, drawer line, prep line, and server coolers are all at 4 C or colder - good.
No hot holding during inspection.
Mussels - tags are being kept. No raw oysters on the menu.
Recommend liquid pasteurized eggs for menu items where eggs will not be fully cooked (see BCCDC website).
Hand washing - liquid soap and paper towels are provided at hand sinks. Provide dispensers for paper towels that are not in dispensers.
Chlorine sanitizer is in labelled spray bottle.
Dishwasher has a final chlorine sanitizing rinse of >50 ppm.
Keep your food safety plans on site and keep temperature records.
