Utensils in grill and prep area used for hot foods kept in warm water. Recommend one of two alternatives - Use quats solution water at 200 ppm (quats is a foodsafe sanitizer) or in ice baths. **Both require frequent change over.

Make sure both chicken hot holding units are kept on the 1200 Watt setting at all times when in use.
**Recommend labelling the proper setting to use.

**Rice must be re-heated prior to placement in hot holding unit in order for proper hot holding temperatures to be maintained and food in the inserts does not become an incubator for microbes.

Recommend both the sanitizer spray bottles (done) and the de-greaser spray bottles get properly labelled.
