Observation (CORRECTED DURING INSPECTION): Walk-in cooler measured at an average temperature of 6.5-8.5 C.
Corrective Action(s): Perishable items moved to other coolers. Ensure these are kept out of the cooler until it has been fixed and reinspected.

Observation (CORRECTED DURING INSPECTION): Low-temperature dishwasher rinse contained zero chlorine sanitizer.
Corrective Action(s): Dishes manually sanitized in a 200ppm bleach bath during inspection. Ensure all dishware and utensils are manually sanitized for 2 minutes until the machine has been fixed and reinspected.

Observation (CORRECTED DURING INSPECTION): Dirty cutting boards and baking trays were stored in the mop sink prior to washing.
Corrective Action(s): Moved during inspection. Discussed use of mop sink with operator during inspection. Reminder: this sink is for mop use only - this is not a sanitary space to store food utensils or equipment, even if the equipment is dirty.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: General cleaning is required throughout the kitchen, including in dry goods storage areas/shelving, inside the glass-door cooler, and on top of the double-stacked ovens. Significant accumulation of food debris observed.
Corrective Action(s): Clean affected areas by the end of this week (15th January 2017).

Observation: 1) Low-temperature dishwasher is not dispensing chlorine sanitizer in final rinse water.
2) Walk-in cooler is not maintaining food at 4 C or colder.
Corrective Action(s): Have both machines serviced by tomorrow (12th January 2017). Call for reinspection once fixed.
