Observation: Build up of debris noticed underneath shelves, equipment and counters in the main kitchen, freezer closets and dry storage room.
Corrective Action(s): Thoroughly clean the floor in above areas to remove all debris ( By Nov. 12, 2018). Ensure that all food items and equipment are stored at least 6 inches off the floor.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Noticed plastic containers not rated for hot foods being used to store hot soups and gravies etc.
Corrective Action(s): Only use stainless steel or NSF heat rated containers for storing hot foods. Do not microwave foods in plastic containers. ( immediately).

Comments

*Ensure that mop and mop bucket are thoroughly cleaned with hot water before storing.
* Grease build up has been cleaned from the kitchen walls, however more cleaning required above the fume hood.


A couple of new commercial fridges have been purchased. Good.
Upright coolers below 4 C.
Both preparation coolers were below 4 C.
Hot holding of soups and gravies > 60 C.
Dishwasher final rinse: 71.5 C at plate surface
Chlorine sanitizer in the third sink and wiping cloth bucket tested 200 ppm.
Liquid soap and paper towels available at the hand sink.
