Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)] (1. Approximately 400g of barbequed salmon and 300g of chicken breasts were stored in undercounter prep cooler across from cook line at an internal temperature of 9-10C. Cooler was at ambient temperature of 9C, and salmon and chicken breasts were prepared from last night / this morning.

Follow-up inspection to routine conducted on May 3, 2018 (RPT #: JMAA-AYETQN). All pending infractions have been resolved.

- Under-counter prep cooler now at 0.6C (Max: 4C). Technician had serviced it this morning and increased the freon gas pressure. You may now store potentially hazardous foods in the under-counter prep cooler.
- Magnetic knife holder, knives, peelers were maintained in sanitary condition at time of inspection
- Ventilation canopy and area underneath cook line has been cleaned - thank you
- Operator had misplaced permit and had contacted the billing department for issuance of a replacement permit. Permit fees for this fiscal year have been processed. Operator to contact EHO when permit is received
- Temperature logs available but not updated yet. Please begin actively maintaining your temperature logs as per your food safety plan
- At time of inspection, owner had started FoodSafe 1 Refresher course - will provide EHO with update when this is completed

Please ensure that your facility is maintained in sanitary condition, and to routinely check temperatures of all coolers.
