Hand sink stocked with liquid soap and paper towels.
Sanitizer (quats) measured 200 ppm
Walk-in coolers were 1-2 deg C.
Walk-in freezer was at -25 deg C
Dishwasher final sanitizing rinse reached 71 deg C at plate surface (temp. steadily climbing as it gets used more).
Line coolers were at or below 4 deg C.
Hot holding cabinets (eggs, chicken patties, hash browns) was at or above 60 deg C.
Hot holding for soups was at 70 deg C or above.
Temperature log was available in the tablet.
No signs of pests noted. Pest control monitoring in place.
