Observation: During time of inspection, low temperature dishwasher dispensing 0ppm chlorine residual
- Staff informed that service tech coming this afternoon
- Staff informed that dishwasher is working, Environmental Health Officer deemed not working during time of inspection
- 3 compartment sink being utilized for ware-washing during time of inspection
Corrective Action(s): - Dishwasher must always be dispensing at least 50ppm chlorine residual at final rinse
- Service and maintain dishwasher to ensure that at least 50ppm chlorine residual is dispensed at final rinse
- Use test strips frequently to monitor sanitizer concentrations

Comments

Follow up inspection to MTRG-AFWV88.
During time of inspection, the following deficiencies were corrected:
- Milk crates of potatoes and peeled onions were stored are now stored at least 6" off the floor
- No garbage bags observed to be used to store foods
- Food debris/ grease accumulation has been removed throughout the facility, noticed improvement in areas such as common touch areas of coolers, underneath, between and on sides of kitchen equipment in facility, shelving in facility (i.e, spices rack, various compartments holding pots and pans), various walls in facility with food/liquid spillage accumulation
- Heavy grease accumulation on metal slats of commercial fume hood at main cook line has been removed
-Walk in cooler ceiling and fan covers has been cleaned, now free of dust/debris
- Drip trays underneath cold holding equipment have been removed
