Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation: Noted cooked rice in a single use plastic container stored in the hot holding unit insert. Internal temperature of rice 49C - discarded at time of inspection.
Correction: Ensure hot holding of rice is maintained at 60C or higher. Ensure hot holding unit is turned up high enough and do not double stack the plastic container inside the hot holding unit.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Sanitizer in spray bottle was too strong (bleaching out the test strip). Several wiping cloths noted to be stored on the counters and hanging on hooks throughout the kitchen.
Correction: Dilute sanitizer in spray bottle and ensure it is maintained at 100ppm. Keep all wiping cloths stored in sanitizer solution to prevent microbial growth.
