Observation: 1. Improper dispenser with no handle (bowls) used and stored within in a bulk flour container in the kitchen area.
2. Raw eggs stored on the top shelf above produce in the walk-in cooler.
3. Not all food in the walk-in cooler were stored covered/ protected.
Corrective Action(s): 1. Remove the bowl and use a proper dispenser with a handle for dispensing bulk food items. Store the dispenser in a way where the handle does not come into contact with the food.
2. Re-organize the shelf and store raw eggs below produce. Follow proper storage hierarchy for all food - raw eggs and raw meat below or away from produce, ready-to-eat and cooked food.
3. Place plastic wrap or lid on all food in the walk-in cooler.

Observation: 1. Droppings noted in the following areas: Floor in the dry storage area for dishwares in the dishwashing area and in the walk-in cooler area - below most metro shelvings.
2. Dead mouse noted in a snap trap by the upright freezers in the back area.
Corrective Action(s): Clean and sweep all mouse droppings noted in the facility and sanitize all areas noted with the droppings. This will help with tracking the movement or number of mice in the facility.
Facility has hired an external pest control company that comes weekly/ biweekly to set trap and inspect facility. Confirm how often the pest control company comes in and increase to weekly visit and continue to work with them to mitigate and resolve pest issue.

Routine inspection conducted today:
Handwash stations, including washrooms, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4C or below.
All freezer units were at -18C or below.
200 PPM chlorine residual detected in the sanitizer container - please ensure to always have the container readily available whenever food preparation is happening.
The high temperature dish machine was noted at 71.0C at the plate level during the rinse cycle.
Chef has a valid FoodSafe level 2 certificate and his is onsite at the time of inspection.
