Follow up inspection conducted to verify that violations identified in routine inspection have been corrected.
- Cooked rice for poke bowls hot held in rice cookers at safe temperatures (>60C). Brown rice 72C; white rice 69C. Ensure food safety procedures are followed. Prior review and approval is required if any changes to products or procedures are proposed.
- Unpackaged ready to eat foods in display cooler are no longer stored directly adjacent from raw products. Ensure this separation is maintained. Recommend physical barrier.

Pending violation:
- Code 308: Large open cooler in retail area has not been repaired/replaced and remains at >4C. Temperature was 14C. At the time of the inspection, no potentially hazardous foods were stored in the cooler. Adjacent cooler unit is being used and had adequate capacity and was operating at 4C and had a thermometer present for monitoring. Staff on duty reported that decision is being made whether large cooler is being repaired or replaced. Provide plan and timeline for completion to undersigned. In the interim, ensure no potentially hazardous foods are stored in the cooler until it is operating at 4C or colder.
