Observation (CORRECTED DURING INSPECTION): Open can of condensed milk observed in prep cooler in front cooking area. Operator mentioned that it is for perosnal use. Condensed milk was removed from the cooler to a seperate area of the cooler.
Corrective Action(s): Opened cans of food can cause chemical leaching and should be either discarded after opened or the food should be transferred to a food grade container to be stored in the cooler. All personal use items should be stored in a seperate/designated area of the kitchen for personal use only.

Observation (CORRECTED DURING INSPECTION): Ventilation hood observed with build-up of grease. Next scheduled maintenance cleaning is Jan 19, 2022.
Corrective Action(s): De-grease and clean all ventilation hoods to prevent contamination to food. Ensure ventilation hoods are cleaned more frequently between scheduled maintenance cleaning to prevent build-up.

Observation (CORRECTED DURING INSPECTION): Bleach sanitizer bottle observed unlabelled during time of inspection. Operator labelled bottle during inspection.
Corrective Action(s): All sanitizer bottles must be stored labelled to prevent chemical contamination to food.

1. Temperatures
- 2-door cooler at 4'C
- Freezer at -18'C
- Prep cooler in back at 4'C
- Prep cooler at front at 4'C (top and bottom)
- Beverage cooler at 3'C
- Second cooking step observed in use for shawarma meat
- Thermometers available in cold-holding units

2. Sanitation
- General sanitation of premises satisfactory
- Hand washing stations in front service area, back prep area and staff washroom adequately supplied with liquid soap, paper towel, hot and cold running water
- Bleach sanitizer bottle measured at 200 ppm chlorine concentration with test strip
- High-temperature dishwasher measured at 77'C at plate surface (above minimum of 71'C)
- Ice machine observed in sanitary condition
- 2-compartment sink available with drain plugs

3. Pests
- No signs of pests during time of inspection

4. Storage
- All food observed covered
- All food observed at least 6 inches off the floor
- Ready-to-eat items (produce) stored separate from raw meat
- Chemicals stored away from foods in dry storage area
