Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
All temperatures met health requirements:
- Coolers maintained at or below 4 degrees Celsius (40 degrees Fahrenheit).
- Walk-in freezer maintained below -18 degrees Celsius (0 degrees Fahrenheit).
- Hot holding for meatballs, sauce and soups maintained greater than 60 degrees Celsius (140 degrees Celsius).
Temperature records maintained.
Probe thermometer available onsite.
3-compartment sink set up properly for manual warewashing.
QUAT sanitizer at dispenser, in 3-compartment sink and in spray bottle = 200 ppm.
General food storage practices very good:
