Observation (CORRECTED DURING INSPECTION): The sanitizer spray bottles and solution used for wiping cloths did not have the required level of sanitizer.
Corrective Action(s): Refresh sanitizer solution more frequently. Don't forget to replace the sanitizer in the mini spray bottle that's in the bar area.

Observation: The dipper well in the kitchen was not turned on at the time of inspection even though utensils were being stored in it.
Corrective Action(s): Always turn the dipper well on while in use.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Some general cleaning is required.
Corrective Action(s): The waffle maker is caked with grease. Get this unit cleaned. Clean behind the fryers. The floor under the green shelves in the dry storage room needs to be cleaned. PURCHASE WHEELS FOR THESE SHELVES AS DISCUSSED.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) There's a leak at the base of the keg cooler in the bar area.
2) The rubber seal along the handle of the walk-in cooler door is loose and blocking the door when it's closed.
Corrective Action(s): 1)Get this fixed. As per manager on duty, the request to get it fixed has been made through the district manager.
2) Replace the seal.

-all coolers are below 4 degC
-all freezers at -18 C or less
-all handsinks were stocked with liquid soap, paper towel and hot/cold running water
-high temperature dishwasher reached 72 degC at plate level
-Glasswasher in bar area had iodine-based sanitizing solution at 25ppm
-Monthly pest control company is on contract (Ecolab)
-Manager on duty had taken the FS Level 1 Refresher in July, 2018
-Temperature logs are being maintained
-The leak in the cooler in the waitress station has been fixed.
