Observation (CORRECTED DURING INSPECTION): New KAY* Peroxide Multi Surface Disinfectant and Cleaner is used as a sanitizer and test strips with instructions available, however target concentration was unknown. (2350 ppm / 3500 ppm / 5000 ppm).
Corrective Action(s): Ensure all sanitizer and chemicals used in the premises are prepared and tested at the appropriate concentration and used for its intended purpose. This peroxide product must be at 3500 ppm peroxide as per the approved sanitation plan. Ensure staff are trained to test for this target concentration. The manager has circled the target concentration on the test strip container for staff.

Other test strips available on-site:
1. Chlorine test strips (100 ppm)- wiping cloths
2. QUATS test strips (200 ppm)- dishwashing

Ensure staff are aware which test strips are required for which chemical and what target concentration is required.

Observation (CORRECTED DURING INSPECTION): 1. Ice scooper left on its side in ice inside the ice machine.
2. Toasted bagels left of lower shelf under toaster with in complete plastic wrap coverage
Corrective Action(s): Ensure all food is protected at all times:
1. Ice scooper must be stored outside ice and unit in designated holder
2. Toasted bagels must be completely covered when stored to protect from contamination

Observation: Equipment in need of repair:
1. Missing handle on ice machine lid
2. Top door of ice machine held closed with black duct tape
3. Handle missing off meat freezer sliding door
4. Cabinet doors above meat freezer held closed with tongs - missing magnets
Corrective Action(s): Ensure the above equipment are repaired and maintained in good condition.
1. Replace handle on ice machine lid/door
2.Repair ice machine so it can close properly with out the aid of tape
3. Replace missing handle for meat freezer door
4. Repair cabinet doors so they stay closed with doors are shut. Tongs are not a suitable replacement.

- Under counter coolers were all 4 C or colder
- Reach in freezers were all - 12 C or colder
- Hot holding was 60 C or hotter

- Hand sink and staff washroom had liquid soap, paper towel, hot and cold water
*Staff observed washing hands properly on multiple occasions during inspection
- Wiping rags were in 100 ppm chlorine
- 3 compartment sink had 200 ppm QUATS
- Sanitizer bottles noted 3500 ppm peroxide
- No signs of pest activity noted during inspection, pest control is on contract
