Observation: Dust and chocolate shavings are observed underneath the pallets and on the floors along the walls.

Comments

GEN
- All handwash stations have liquid soap, paper towels and hot and cold running water
- Staff wear hair nets on duty and demonstrated good employee hygiene practices
- Cleaning agents are stored separately from food products
- All food products are stored at least 6 inches off the floor
- QUATS sanitizer available in spray bottles
- Operator explained how equipment is cleaned. Equipment is washed with soap and water, then sanitized with a QUATS based solution.
- No signs of pest activity observed. Operator has contract with pest company "Assured"
- Temperature of chest freezer is -26.8C
- Products on shelves are monitored using a LOT code, which indicates the expiry date
Note:
- Operator has sealed walls and corners in the chocolate manufacturing section with a metal protector
- Operator is continuing to remove unused equipment out of the facility. As mentioned in a previous inspection report (See LQUN-B4QQEP), this will be completed by August 1, 2019.
