Observation: Accumulation of dust, flour, and grease found on the ceiling tiles, upper walls, and on the exhaust hood filters. These items could fall into food and/or attract pests.
Corrective Action(s): Wash and clean the mentioned areas to remove the dust, flour and grease. Increase the frequency these areas are cleaned to prevent the accumulation.

501 - Operator does not have FOODSAFE Level 1 or Equivalent [s. 10(1)]
Observation: The owner does not possess a valid FoodSafe Level 1 certificate. This was mentioned in the last inspection.
Corrective Action(s): Immediately register and successfully complete the FoodSafe Level 1 course, and obtain a certificate. Failure to do so, may result in the issuance of orders, tickets, and/or fines.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: There are no staff present that possesses a valid FoodSafe Level 1 certificate. Staff have not registered or taken the FoodSafe Level 1 course yet. This was mentioned in the previous inspection and was required to be done by February 1/23.
Corrective Action(s): Immediately register and successfully complete the FoodSafe Level 1 course. There must be one staff member working in the premises at all times, who possesses a valid certificate. Failure to have a FoodSafe level 1 certified staff always present will result in the issuance orders, tickets, and/or fines.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -21C or colder; hot holding units above 60C; and thermometers present.
- Low temp dishwasher had a [Cl2] between 50-100ppm during the rinse cycle. Test strips present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Sanitizer in spray bottles had [Cl2] of 200ppm.
- All foods stored in food grade containers; covered; foods stored in groups with proteins stored separate or below RTE foods; and all foods stored 6" off the floor on shelves or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level has improved, good job. Improvement needed in the mentioned areas.
- Exhaust canopy was professionally services in March 2023. Next service due on Sept. 7/23.
- No signs of pests.
- Back door was propped open, but a screen door was present to prevent the entrance of pests (flies).
- Proper cooling practices observed. Staff place items in shallow pans to cool at room temperature (no more than 2 hours), then it is placed in the cooler for further cooling.
- Cleaning of walk-in-cooler floors, the dry storage area, and the floor under cooking equipment and all prep tables and equipment has been completed and maintained. Great work.

ACTION
- Owner and 2 staff members must complete the FoodSafe Level 1 course, and obtain a valid certificate.
- Increase the frequency of cleaning of the exhaust filters, ceiling, and upper walls.
