209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION):
1) Found a bucket of cabbage and salt/sugar not covered by a lid or food grade material (saran wrap or aluminum foil) in the dry storage area by the back door. This is unsafe as contaminates will fall into the food or customers may touch these items.
2) Found raw proteins being store above or beside RTE foods in the upright freezers and u/c cooler in the kitchen. This is unsafe as the bacteria in juices of raw proteins may drip onto RTE foods, contaminating these foods.
Corrective Action(s):
1) Immediately cover these buckets and keep the lids on them at all time.
2) Rearrange the foods in those cooler and freezer units so all raw proteins are below or storage separately from RTE foods.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
The general sanitation level of the premises is unsatisfactory. There is accumulated food debris and grease on the floor beneath shelving units, cooking equipment and preparation tables; food debris on doors of cupboards, walls behind cooking equipment, and door handles, and there is too many items being stored of the floor, which hinders cleaning of the floor. These conditions will attract pests.
Corrective Action(s):
Scrub all the mentioned areas with hot water and degreaser soap, rinse with clean hot water, and sanitize with bleach. This must be done every day to discourage pests from being attracted to the facility. Remove all items off the floor and STOP storing items on the floor, all items must be store on shelves or 6" off the floor on platforms.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation:
Observed cardboard, aluminum foil, saran wrap, plastic, and newspaper covering various surfaces (walls, shelves, equipment) in the facility. These materials do NOT meet health standards for work surfaces as they are not durable, smooth, or cleanable. These materials actually pose a fire and pest hazard as they are not being cleaned and absorb & accumulate grease. In the past, these materials were accepted as the operator agreed to discard and replace them daily, but this is NOT occurring.
Corrective Action(s):
Immediately removes these materials and STOP using them to cover surfaces. Install proper food grade materials to (stainless steel, painted wood, arborite, FRP, etc.) these surfaces so they are durable, sealed, and cleanable.

Observation:
Found a large number of food containers and their lids, and plastic colinders that were chipped, cracked or damaged. These items are no longer cleanable and pieces of plastic may fall off into food.
Corrective Action(s):
Throw away all damaged food containers, buckets, lids, utensils and colinders immediately. Purchase new items that are food grade and durable.

Observation:
There is a number of unused/broken equipment, and empty food containers or boxes being stored in the premises. These items are cluttering the premises and making it difficult to clean the premises correctly, and will attract pests..
Corrective Action(s):
Remove and throw away all unused/broken equipment and empty food container/boxes. Do NOT keep all these items in the premises.
