The following items have been observed: -->A new single door prep cooler is purchased in replacement on the 2-compartment cooler at cooking line. The new prep cooler has a top compartment to store condiments such as cut onions, cut vegetables, and cut lemons. -->Temperature of new prep cooler is measured to be 3.6oC -->All handsinks with paper towel in dispenser observed -->Food containers are all covered in coolers and freezers -->Areas that require cleaning are now in sanitary condition (ventilation exhaust system is scheduled to be cleaned this week) -->New re-usable food containers are noted for foods. Slowly replace all buckets. *No signature is required at this time
