Observation: Food Storage: Food stored in unprotected containers are being stored ontop of each other. Storage containers deteriorating.
Corrective Action(s): Ensure all food/ingredients are being stored in covered food grade containers. Damaged storage containers are to be discarded.

- Temperature Control: Monitoring required. Gauges noted. Probe style gauge on site for internal cooking temperature monitoring.
- Mechanical Dishwasher: High Temperature = not tested this date.
- Bar Glasswasher: Front service area not functioning. Currently not being used. All implements are washed and disinfected in the kitchen.
- Wiping cloth storage discussed. Cloths used on food contact surfaces are to be stored in a sanitizer at all times. (ie: ½ tsp bleach per liter of water)
- Food Storage: Refer to Violation Notes. Food separation discussed. Thawing procedures discussed. No items are to be stored in opened metal containers.
- Sanitary Facilities: Acceptable. Bar: Cloth towels not to be utilized for handwashing purposes. Remove.
- Chemical Storage: Acceptable.
- Garbage, Grease and Composting Disposal: All items are to be kept stored in covered bins.
- Staff Hygiene: Routine hand washing required by all staff. Glove use discussed. No bare hand contact with cooked, ready to eat food items permitted.
- Ice bin cleaning discussed.
- Pest Control: Monitoring required.
- Structural: Deteriorating surfaces/conditions noted. Continue efforts to keep all surfaces in good repair.
- Food Safe trained staff on site.
- Food Safety Plan and Sanitation Plan information are to be kept on site for reference. Generic chart on site.

* Limit use of cardboard to line surfaces within this facility. Increase cleaning if required.
