Observation (CORRECTED DURING INSPECTION): Back door observed open at time of inspection (1110am). Operator indicates it helps when steaming the tapioca pearls and odours to dissipate.
Corrective Action(s): Keep the back door closed at all times except for when taking goods in & out. There is a back window already open to help with odours.

Other measures you can do is install a screen door of sufficient mesh size to exlude flying insects and flush against the door frame to exlude rodents. As well as electric fans should help.

Reviewed Manual Wash Method: Wash-rinse-sanitize with bleach for at least 30 seconds -NOTE: the ware must be fully submersed in the bleach water for effective sanitizing

Bleach sanitizer sprays and buckets >100ppm as per test strips -keep the rinsed towels in the bucket sanitizer when not used
Handsinks adequately stocked and clear for use
General sanitation very good -no signs of pests
NOTE: operator is only monitoring for ants in facility -you should be monitoring for other pests as well such as flying insects and rodents through the use of mechanical traps such as sticky, live and snap traps (do not use bug zappers or poisons)

NOTE: there are a number of goods stored on the ground in the washroom and hallway -these goods should be stored off the ground >15cm on a shelf -more multi-shelf racks will assist here
