Observation: Found meat slicer to have food debris noted in areas around the blade top and bottom, not used for about a week.
Corrective Action(s): Ensure meat slicer is properly broken down to wash and sanitize all areas after each use. Do not use until properly washed and sanitized.

Observation: 1. Walk in cooler door has been damaged and no longer seals properly.
2. Water appears to be leaking from the walk in cooler at the front right corner.
3. Ice building up on walk in freezer gauge and light switch
4. Front of ice machine is being held together by tape
Corrective Action(s): 1. Have walk in cooler door repaired so it closes securely all the way around.
2. Find the source of the water leak and have it repaired.
3. have the seals on the walk in freezer checked, and ensure door is properly closed each time. Remove ice build up on gauge, light fixture and below the door.
4. Repair the front of the ice machine in a food safe manner so tape is not required or replace the unit

NOTE: do not use a container inside an insert in the prep cooler as plastic does not transfer temperatures well. Put food directly into the insert in the prep cooler.
NOTE: Ensure to keep daily records of all temperatures and sanitizer concentrations.
- Freezers were - 10 C or colder
- Hot holding was 60 C or hotter
- Hand sinks had liquid soap, paper towel, hot and cold water.
- Spray bottles had 200 ppm quat and wiping rags were in 200 ppm quat
- Dishwasher had a final rinse of 100 ppm chlorine
- No signs of pest activity noted
- General sanitation is satisfactory
