Corrective Action(s): Required operator to transfer all portioned sauce to a cooler at 4 C or lower. Ensure to store the sauce at 4 C or lower once the main container is opened. Transfer was complete before the end of inspection

2. Air intake covers severely dusted, operator indicated that the air intake duct is scheduled to be cleaned soon.
3. Un-opened cans noted on the floor, below potato shelves
Corrective Action(s): Required operator to clean and sanitize all areas in the kitchen, especially below cooking equipment to remove grease and food debris. Air intake covers are to be cleaned. All foods ust be stored off the floor to facilitate easier cleaning
