Observation (CORRECTED DURING INSPECTION): Paper towels were missing from the washroom hand sink and triple-sink in the back area.
Corrective Action(s): Staff refilled paper towel dispensers at time of inspection. All hand washing stations must be properly supplied with liquid soap and paper towels at all times.

Observation (CORRECTED DURING INSPECTION): Bleach sanitizer solution in spray bottles were too strong and bleached out the chlorine test strips.
Corrective Action(s): As previously discussed, ensure to mix only 1/2 tsp of bleach per litre of water for proper concentrations.
Staff diluted spray bottles at time of inspection. 100 ppm chlorine residual detected after dilution.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: No staff on duty at time of inspection had Foodsafe level 1 or equivalent.
Corrective Action(s): During all hours of operation, at least one employee onsite must have Foodsafe level 1 or equivalent.
Regular staff to register for foodsafe course and email proof of registration and certificate to the health inspector.
Correct by: 1 week.

Comments

- Hand washing sinks were supplied with hot/cold running water and liquid soap. Main hand sink in front area was supplied with paper towels as well. Sinks in back area missing paper towels - see violation code 401 above.
- Triple-sink for manual warewashing maintained in sanitary conditions.
- Bleach sanitizer solution available in spray bottles at 100 ppm (chlorine residual), after staff diluted the solution (see violation code 209 above).
- Pizza prep cooler, upright glass-door cooler, and walk-in cooler measured at 4C or colder.
- Chest freezer measured at -18C or colder. *Note: one upright freezer is being repaired, measured at 0C.
- No hot-held pizza at time of inspection
- Food storage practices satisfactory
- Equipment maintained in sanitary conditions
- General sanitation satisfactory at time of inspection
- No signs of pest activity noted at time of inspection
- Laundry/storage room at back of store is not being used for proofing pizza dough - good.
**As previously discussed, there must be at least one employee onsite with Foodsafe level 1 (or equivalent) during all hours of operation. Ensure more staff register for and complete Foodsafe level 1, and email certificates to the health inspector. See violation 502 above.
