- General sanitation is good.
- All handwashing stations (front, back) stocked with cold/hot running water, soap, and paper towels.
- All coolers (display, undercounter, upright) < or = to 4C
- All freezers (upright) < or = to -18C
- High temperature dishwasher reached 79.9C at the plate's level during the final rinse cycle.
- Three compartment sink available for manual dishwashing for oversized equipment, plates, other food contact surfaces. Ensure that dirty plates and utensils are not stored in the designated sanitizing compartment of the three comp sink.
- Milk steamer sanitized after each use with Quat sanitizer at 200ppm.
- Surface sanitizer was available in red buckets (labeled) at 200 ppm Quat near the main bar area. Changed every 2 hours.
- Dry storage area is good.
- No signs of pest activity at the time of the inspection. Abell Pest Control company conducts routine inspections.
Note: The pastry display case is not refrigerated to < 4C. No potentially hazardous food items stored inside.
