Observation (CORRECTED DURING INSPECTION): Inside of ice machine had pink organic matter build-up. Chef was notified and they immediately disposed of the ice and clean and sanitized the affected area.

Observation (CORRECTED DURING INSPECTION): Scoops in dry storage bins were placed directly inside food item with handles submerged. Chef was informed and immediately put scoops for wash.

Comments

Overall, kitchen is maintained in a sanitary manner

-Hand wash station is fully equipped. Both paper towel and hand dryer available.
-Walk-in coolers are both at 4C and storage is adequate
-Freezer is at -18C
-Dry storage is good. Pest proof containers are used. Ensure scoops are stored in sanitary manner
-Proper cooling method was observed with Channa Masala in shallow containers. Good job!
-Low temperature dishwasher achieves 50ppm Chlorine.
-Sanitizer solution in bucket with cloth achieves 100ppm Chlorine
-Both bar area sinks are fully equipped and no concerns noted.
-No signs of pest activity
-Facility uses both IR thermometer and Probe thermometer
