Observation (CORRECTED DURING INSPECTION): No chlorine detected in the diswasher after cycle.
Corrective Action(s): Dishes must be manually sanitized after running them through the diswasher. Pot sink is to be washed and filled with clean water and bleach (200ppm). Dishes are to be soaked for about 2 min and then air dried.
Please note this can be done only as a temporary measure. Dishwasher must be repaired prior to dinner rush.

Comments

- Temperature of coolers and freezers were adequate.
- Liquid soap and paper towels were present at hand sinks.
- Bleach solution was available for use.

**Some deep cleaning required in hard-to-reach areas (under shelves).
** Do not store take-out containers on the floor.
** Flooring in sushi bar area must be addressed (all surfaces must be easy to clean and smooth to avoid accumulation of dirt).
** Use of gloves: Gloves must be changed as often as hands need to be washed. When switching from one job to another, a new pair of gloves must be used.
