Observation: Rodent droppings observed on work table near walk-in cooler and behind shelf near back wall. Professional pest control in place (scheduled for visit tomorrow).
Corrective Action(s):
- Wash and sanitize all areas where rodent droppings are found using a 1:10 bleach solution (1 cup bleach: 10 cups water)
- Place all foods in pest proof containers
- Plug any entrances
- Follow all pest control recommendations

Comments

General:
- handwashing station stocked with soap, paper towels and hot and cold running water
- dishwasher reached 71C at final rinse cycle
- interior of ice machine sanitary - however door appears to be leaking water and operator states it needs repair (has called tech already)
- in-use utensils in running water - ensure flow is a little more than a trickle
- ice cream scoop washed after every use (dipper well not on due to very little use)
- proper cooling observed (pot of hot ground beef in ice water bath)
- vent baffles appear sanitary - professional cleaning due May 2020
- FOODSAFE Level 1 renewed last week, temporary certificate available

- walk-in cooler: 4C
- upright glass cooler:4C
- hot held potatoes ;72C
- hot held rice and tomato sauce: 65C
- upright freezer: -19C
- ice cream freezer: 22C
