General:
- handwashing station stocked with soap, paper towels and hot and cold running water
- sanitizer measured 100ppm chlorine in the sink - do not mix soap into this solution
- high temperature dishwasher 73C reached at the final rinse cycle
- utensils stored in water that is changed out every half hour - use ice water instead; change ice water and sanitize utensils every four hours
- ice machine in sanitary condition
