401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): No paper towel (empty holder) or soap at two compartment sink beside dishwasher. This is needed to ensure staff are able to wash hands between handling dirty and clean dishes at the dishwasher.
Corrective Action(s): Ensure this station is always equipped with soap, paper towel, hot and cold running water.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Lights above the food preparation area still do not have covers. Door to staff washroom is still not self closing. These issues were noted on the previous inspection reports.
Corrective Action(s): Install light covers and self closing hinge/device on staff washroom door.

304 - Premises not free of pests [s. 26(a)]
Observation: Noted fly activity by back entrance to the kitchen. Noted open back door from recent delivery.
Corrective Action(s): Ensure back door is closed immediately upon deliver or obtain/install a screen to prevent the entry of pests.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: A) Noted rice stored in single use white plastic container that foods come in being hot held in hot holding unit. This issue was noted on the previous routine inspection. Also noted these containers being used to reheat foods in the microwave.
B) Racks in large 3 door cooler unit were rusting
Corrective Action(s): A) These are single use containers that are not meant to be reused for reheating, hot holding or food storage. Ensure only proper reusable containers are used. Only microwave safe containers are to put in the microwave.
B) Repair/replace racks so that they are smooth and washable.

Comments

- All other hand wash stations had soap, paper towel, hot and cold running water (ie. across cookline, bar, washrooms...etc)
- All coolers (3 door reach in wall cooler, upright 2 door in kitchen, sliding two door in kitchen, prep cooler, domestic cooler in dry storage, small cooler in dry storage...etc) less than 4C
- All freezer less than -18C (3 chest freezers in hallway, 3 upright one door freezers in dry storage)
- Noted frozen prawn being thawed under cold running water
- Hot holding of rice 63C
- Ice machine appeared clean with scoop for ice in a separate container
- Chlorine sanitizer in spray bottle 100ppm. Reminded staff to keep wiping cloths stored in a container of sanitizer solution to prevent microbial growth.
- General sanitation satisfactory
- Low temperature dishwasher had 50ppm chlorine sanitizer
