Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Low-temp (chlorine) dishwasher is not providing an adequate supply of sanitizer to sanitize dishware. Possible air leak in the supply line.

Comments

-Follow-up inspection to confirm compliance with correction requirements noted on routine inspection conducted March 16th, 2022:
-Low-temp dishwasher has been serviced and is now providing ~100ppm chlorine sanitizer residual during rinse cycle
*Please manually scrub the interior surfaces inside the dishwasher to remove all visible soil/film
*Ensure to confirm sanitizer concentration daily using a chlorine test strip
-Handles & surfaces of equipment have been cleaned and aluminum foil lining on the stovetop has been replaced
*Scrub the grill surfaces of the stove to remove all crusted-on food debris
-General sanitation around the cooking area in the dining room has improved, however, additional action is necessary to restore some of the surfaces:
*Thoroughly scrub or steam-clean the metal wire shelf unit in the cooking area
*Thoroughly scrub of steam-clean the decorative stone-tile columns in the cooking area
*It's strongly recommended to obtain the services of a professional cleaning company to provide regular cleaning/maintenance (ie. monthly) of the cooking area, as the method of cooking generates significant oil vapour, which collects on surfaces in the surrounding area.
-Collected payment for outstanding operating permit fee in the sum of $150.00 (bank draft-350220) for 2021-22 fiscal year. Please note, a new invoice will be mailed out in April 2022 for renewal of the operating permit. Please ensure to provide payment promptly to avoid future enforcement actions.
