Observation: Several containers of various pizza toppings in pizza prep cooler left uncovered.
Corrective Action(s): All food items must be covered and protected from contamination when not in use.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): At start of inspection, 4 packages of frozen chicken breast in 1 plastic bin were seen underneath the pizza oven. Packages were placed under the oven to defrost quickly for immediate use.
Corrective Action(s): Do not continue this practice. All frozen items must be properly thawed using one of the following methods:
> Under refrigeration at 4C or colder overnight, OR
> Under COLD running water in sealed packaging.

Packages were relocated to 3 compartment sink and placed under running water immediately. Do not use hot or warm water for faster defrost.

Observation: QUATS sanitizer solution in unlabelled spray bottles.
Corrective Action(s): Please label spray bottles so that their contents inside are easily identified. This will help to prevent accidental mixing of incompatible chemicals.

> Handsink and washroom sink supplied with hot+cold water, liquid soap and paper towels.
> 200ppm QUATS solution available for sanitizing.
> 3 compartment sink used for manual warewashing.
> No signs of pests at time of inspection. Pest control services provided monthly by Orkin.
> Vent hood in excellent sanitary condition; professional cleaning occurs every 3 months. Next cleaning date is scheduled for July 10, 2022.
> Dry storage satisfactory. All items off the floor.
> General sanitation is satisfactory.
**Please ensure frequently used utensils such as tongs and pizza cutters are cleaned and sanitized after each use or maximum every 4 hours.
