Follow up inspection:

-A few droppings were still observed in the corner shelving unit near the extra items and machine that is not in use and below the sink near the dishwasher. Clean the affected areas with bleach water to remove the droppings and continue monitoring for signs of pest activity. Declutter this area as well to remove the extra plates and extra machine from the food premises. The owner's son mentioned that they clean and check for droppings each day. A few mice were caught in the mechanical traps according to the owner.
-Other areas of the food premises were free of droppings. No ripped food packaging was observed. Open bags of flour were stored in a pest proof container with a tight fitting lid. Unopened bags of flour were placed on a relatively high level on a shelf.
-Plates, knives, and the dough machine are rewashed and sanitized prior to use every morning according to the operator's son.
-Currently, knives are being saran wrapped overnight. Obtain a pest proof food grade container with a tight fitting lid for the knives as well.
-Continue with the pest control program. Submit a copy of your next pest control report and a photograph of the container for the knives to the area E.H.O. within this month.
-100-200 ppm chlorine sanitizer was set up in the bucket.

-Thermometers were available inside refrigeration units.

*The screendoor still needs to be repaired (Code 305 on the routine inspection report). The operator's son mentioned that they are keeping the backdoor closed currently and will replace the screen during their Christmas break. Ensure the screen at the backdoor is replaced by February 1, 2016 (within 3 months time) and the backdoor is kept closed at all times in the meanwhile to prevent rats and mice from entering the food premises. Contact the area E.H.O. for a follow up inspection once the screen has been replaced.
