Observation: Overall general sanitation is satisfactory but some areas of the premises appears cluttered and disorganized, specifically the back mop sink area and front retail area.
Corrective Action(s): Declutter premises and organize facility so it is tidier. Remove any items not required for the operation of the premises (ie. empty egg cartons, unused boxes...etc)

Comments

- Premises makes dim sum and sells it prepackaged and frozen. Some items are raw (ie dumplings) and some are steamed (buns). No foods are dispensed for the customers and no ready to eat foods for immediate consumption noted on site. No seating noted for customers.
- Operator prepares food on his own (ie. does not hire staff). Operator sells foods directly to customers (store front) and supplies to a few independent local restaurants/stores.
- Discussed changing premises classification from food service establishment to manufacturing. Operator to complete health application form and submit to the undersigned to have this done.
- Walk in cooler 3C
- Walk in freezer -19C.
- Reach in freezers in retail area -18C to -21. Note some freezers in retail area were turned off and not in use.
- All hand wash stations were fully equipped with soap, paper towel, hot and cold running water (by ware washing sink, in back area, staff washroom..etc)
- General sanitation satisfactory. Premises appears a bit cluttered.
- No obvious sign of pest activity noted at time of inspection. Back door was closed at time of inspection.
- Bleach available on site. 100ppm chlorine sanitizer is available in spray bottle.
- Manual ware washing procedures reviewed at time of inspection – no concerns. Drain plugs available.
- Meat slicer, grinder and dough mixer equipment all appeared to be clean at time of inspection.
- All stored foods appeared protected (ie. stored off the ground, covered, lights in food preparation areas had covers..etc)
