Observation (CORRECTED DURING INSPECTION): One pail of stock was left out overnight for cooling. The content has been discarded.
Corrective Action(s): Ensure that hot foods such as stock is cooled rapidly and kept refrigerated( cool from 60C- 21C in 4hrs and then to 4C in 2hrs).

Comments

General sanitation is satisfactory.
Repaint the wall behind the 3 cmpt wash down sink.
Obtain a thermometer for each fridge.
Store ice scoop outside of the ice machine.
Several new pieces of equipment have been installed- an ice cream dispensing fridge, a dipper well, a new dishwasher and prep fridge.
Temperature of the rinse cycle of the dishwasher is satisfactory.
Handwashing station is satisfactory.
