Observation: Food contact surfaces are not being cleaned and disinfected after use. (ie: pizza trays/tongs, utensils, etc) Items not being stored in a sanitary manner or in sanitary storage containers. Storage bins noted soiled with food debris. Wiping cloths being stored ontop of prep lines.
Corrective Action(s): Ensure all food contact surfaces are being washed and disinfected after use or on a timely manner. All items are to be stored in clean containers in order to prevent post contamination. Limit the amount of wiping cloths being used at any one time. Wiping cloths are to be kept stored in a sanitizer at all times.

Observation: Food Storage: Items being stored in opened, unprotected original metal containers. Items stored unprotected under condenser in walk in freezers - ice thaw noted. Items not being Refrigerated as per manufacturers requirements.
Corrective Action(s): Food Storage: All food/ingredients are to be stored in covered, food grade containers. proper fitting lids are to be utilized. Continue efforts to store all items 6" off of floors.

Observation: Sanitation: Food./debris noted inside, behind and under equipment. (ie: interior of upright cooler, pizza bin, stoves, ovens, etc.) Walk in freezer: Large accumulation of ice noted.
Corrective Action(s): Pull all items away from walls - clean and organize facility. Remove all unused items to free up space. Organize shelving. Store all items in designated areas. Clean/defrost and organize walk in cooler.
