209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Food equipment (slicer, spatula, insert, and a mixing bowl) were observed stored on the floor under the 3-compartment sink and underneath a shelving unit. Two extra cutting boards were stored on the floor.
2. A cloth towel was placed over a container containing dry goods. Dry storage room contained personal belongings (purses and coats), chemicals, towels, a broom, and a vacuum that was inter-mixed with dry food. A bag of dry lentils was not fully sealed in the dry storage room.
3. Food products (Chickpea chana dish, paneer pakoras, and veggie pakoras) were not covered inside the walk-in-cooler.
Corrective Action(s): 1. Operator placed all of the aforementioned items into the first compartment of the 3-compartment sink for dishwashing purposes [Corrected]. Make sure they are washed, rinsed, sanitized, and air dried before they are stored in a clean area/shelving unit that is at least 6 inches off the floor; correct today.
2. Re-organize the dry storage room so that dry food ingredients/products and take-out containers are stored away from sources of contamination or items that are incompatible with the safe storage of food (personal belongings, cleaning supplies, cleaning chemicals, etc.); Correct today.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Build-up of food debris was present on the following items/areas of the food premises:
-Air drying shelving unit above the 3-compartment sink
-Metal shelving unit next to the 3-compartment sink
-Floor near the cooking equipment and 3-compartment sink.
-Areas around the dough mixer equipment (non-food contact surfaces)
Corrective Action(s): Clean and sanitize the above noted areas by January 23, 2019.

Observation (CORRECTED DURING INSPECTION): Front display coolers for refrigerated sweets (gulab jaman, ras gulla, etc.) were above 4 degrees C (near 10 degrees C) during the inspection.
Corrective Action(s): Operator adjusted the temperature of these coolers to at or below 4 degrees C. Make sure moist sweets are stored at or below 4 degrees C. Check coolers at least every 4 hours.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation (CORRECTED DURING INSPECTION): Three bottles of bleach were stored on shelving units that were also being used to store dry food in the dry storage room.
Corrective Action(s): Operator moved the bottles of bleach to the washroom. Make sure all cleaning chemicals/sanitizers are stored in designated areas/cabinets that are completely separate from food storage, food equipment storage, and food preparation areas.

Observation: A floor tile was broken near the cooking equipment.
Corrective Action(s): Replace the missing floor tile with an intact floor tile; Correct within 2 months.

Comments

-Handsinks were supplied with liquid soap, hot and cold running water, and paper towels.
-100 ppm chlorine sanitizer was available in a container. A clean wiping cloth was added into this container by the Operator during the inspection.
-Dishwashing was not occurring during the inspection. Operator was familiar with the wash, rinse, sanitize, and air dry steps of manual ware-washing. 3-compartment sink was operational.
-Walk-in-cooler and prep. coolers were at or below 4 degrees C.
-One door freezer and chest freezer were at or below -18 degrees C.
-Probed food that was being cooled (chicken, rice, channa, and paneer pakoras) were at or below 4 degrees C.
-Refrigeration units were equipped with thermometers.
-No signs of recent pest activity were present at the time of inspection.
-Operator has a FOODSAFE Level 1 certificate that is valid until December 9, 2023.
-Permit to operate was posted in a visible location.
