Observation (CORRECTED DURING INSPECTION): Mouse droppings observed inside food trays used to store utensils and lids.
Corrective Action(s): All utensils, lids and food trays washed, rinsed, then sanitized in the low temperature dishwasher.

Observation: Mouse droppings observed on shelves, inside food trays used to stored utensils, on top of dry storage containers, and underneath and behind equipment.
Corrective Action(s): Operator is currently working with a pest control company to address mouse issue. Pest control services has been increased to once a week. Clean underneath and behind all equipment. Seal all potential entry points to the premise. Clean and sanitize all food equipment/utensils and food contact surfaces on a regular basis.

Walk in freezer at -10 degrees C. New door seal pending.
Small freezer at -19 degrees C.
Centre and right preparation cooler inserts and lower sections at or below 4 degrees C. Left preparation cooler not in use at this time.
No hot holding at this time.
Dishwasher registers 50ppm chlorine during the final rinse cycle.
200ppm quats dispensed from the chemical dispensing system.
200ppm quats available for use in spray bottles.
Hand sink and utility sink provided with liquid soap and paper towels.
FOODSAFE requirements met at time of inspection.

2 compartment sink provided with liquid soap and paper towels.
Glass washer registers 12.5 to 25ppm iodine during the rinse cycle.
