Observation (CORRECTED DURING INSPECTION): 3 small food buckets with hot cooked sliced beef noted with lids on, cooling on the counter at room temp.
Corrective Action(s): Ensure hot foods requiring cooling are rapidly cooled:
1. Small portions (without lid / cover)
2. In ice bath (in prep sink)
3. Stir regularly to allow hot air to escape

Ensure cooling is fast, cool to room temp within 2 hours then place in cooler to get under 4 C within 4 hours. Minimize the time food is kept in the danger zone (<60 C to > 4 C).

Observation (CORRECTED DURING INSPECTION): Bubble tea bar area without sanitizer solution.
Corrective Action(s): Ensure 100-200 ppm chlorine sanitizer solution is available in bubble tea area with wiping cloths. Also ensure there is sanitizer solution available in 3rd compartment of 3 comp sink for sanitizing dishware during manual dishwashing.
Replenish solution every 4 hours or sooner if necessary.
