Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: "REPEATED VIOLATION"
1. No sanitizer solution was available on site.
2. No drain plugs were available to carry out 3 compartment dishwashing.
Correction: Ensure that all utensils/food contact surfaces are properly washed and sanitized.
1. Staff prepared bleach solution at the time of inspection. The concentration was noted at 200ppm. Ensure that sanitizer solution is available on site at all times during operation to sanitizer food contact surfaces such as prep tables and clean in place equipment/utensils.
2. 3 compartment dishwashing method was discussed with the staff. As per staff, drain plugs were misplaced last night. Ensure that drain plugs are available on site to ensure utensils are cleaned and sanitized properly.

Observation: "REPEATED VIOLATION"
No drain plugs were available on site to conduct dishwashing using 3 compartment dishwashing method. As per the operator, the drain plugs were bought yesterday but did not fit in the sink. The second location of this facility has extra drain plugs and will be used on this site.
Correction: In order to adequately clean and sanitize the dishes/food contact surfaces using 3 compartment dishwashing method, drain plugs are required. Ensure that drain plugs are present on site at all times.

Follow-up inspection conducted to routine inspection.

Observations made:
- Drain plugs available on site.
- Operator prepared bleach solution and demonstrated 3 compartment dishwashing method to the staff.
- The concentration of bleach was noted ~200ppm.
