Observation: Sandwich, salad, dessert and back upright fridge are maintaining foods between 8-11C. Remove foods from these fridges and do not use until repaired and able to maintained foods at 4C or colder. Place inserts of food in ice water baths.

Observation (CORRECTED DURING INSPECTION): Glasswasher had empty bottles of both detergent and sanitizer.
Quat sanitizer buckets contained 0ppm Quat. Concentration was checked at dispenser and unevenly dispensing. Staff to dispense manually and check with test strips until repaired.
Corrective Action(s): Replace bottles, prime unit to ensure that it is dispensing detergent and 100ppm chlorine as required. Rewash all glassware - Date to be corrected by: Immediately - Corrected during inspection.
Repair Quat dispenser - Date to be corrected by: Immediately.

Ensure that sticky syrup around syrup wand is cleaned. Ensure all spills are thoroughly cleaned up and that water is poured down all drains including sink that is not functioning in dish area once repaired.
Include back fridges on temperature logs.
