Follow up inspection.
Dishwasher:
- Today, dishwasher was set up and allowed time to heat up to temperature (it took 45 minutes to warm up). Final rinse water temperature reached the required temperature inside of the machine (160F) only when the final rinse water temperature gauge read 182F. Correction Order rescinded.
- Always make sure that the dishwasher is turned on and is hot enough (182F at the final rinse water temperature gauge) EACH time it is used to wash, rinse, and sanitize dishes and utensils.
Cleaning:
- Some improvements noted. Follow a written routine cleaning schedule.
Pest Control:
- Operator has purchased monitoring traps and will monitor for pests as discussed. Place trap on floor behind bulk food bin (under dry storage shelf).
- Some holes were sealed previously. Today, no new activity noted. Food is in pest proof bins.
- **If activity is noted (droppings or activity in traps), contract a licensed pest control expert to help you with your pest management.
