Observation: * Pizza sauce was found in walk-in cooler uncovered and not protected from contamination; Also, the pickled jalapenos were being stored at room temperature in take out containers-- this product requires refrigeration after opening. These items were discarded.
Corrective Action(s): * Ensure all food covered in storage areas and propely protected from contamination. Also, ensure all food product that requires refrigeration is properly refrigerated and stored properly (not in milk crates)

Observation: * Build up of grime/debris found through out food areas and storage(eg. prep cooler cutting board, cooler shleves and doors, etc) which is unsanitary and requires frequent cleaning and maintenance
Corrective Action(s): * Ensure ALL areas properly cleaned and maintained in sanitary condtion(eg. shelving, cutting boards, equipment doors and seals, bases of equipminet, etc)

Observation: * Milk crates are not suitable storage containers for food stuff such as vegetables or take out condiments(eg. pickles, etc). Use suitable containers for food storage that are reusable containers

Observation: * Hand sink water pressure near entry door is not working properly-- water pressure too low. Operator to adjust water pressure so that water flow increased
Corrective Action(s): * Repair hand sink at entry door so that water pressure is adequate and working properly

Comments

* Sanitizer concentration was 200 ppm chlorine residual in bucket to store wiping rags
* Monitoring records were available but not up to date; cleaning/temperature records require updating
* Note: ensure food covered in storage areas(eg. pizza sauce and food in pizza prep cooler, etc)
* Hand washing stations had liquids soap and paper towels; hand sink at back entry door requires adjustment to water pressure
* Cold-holding units were 4'C/40'F or colder
* Freezer was -18'C or colder
* Note: cleaning/sanitizing of food equipment and shelving, etc., is required as build up of grime/debris noted through out and unsanitary
* Follow up inspection to be done next week (April 4th)
