*Through cleaning is required in the following areas to remove grease and debris build-up: -Under the entire cookline -Behind and underneath the ice maker ( remove paper and boxes etc.) -Underneath the preparation counters ( By May 18, 2022). * Ensure that all items,food boxes, food trays and pans etc are stored off the floor in walk-in cooler * Ensure no items are stored on the floor in the bar area. This will allow for easy cleaning as well as help with detecting signs of pests. * Improve lighting intensity in the back storage area where ice maker is located. * Ensure all spray bottles of cleaners/sanitizer are labelled for their contents. Walk-in cooler at 1.5 degrees C Main preparation cooler below 4 C Upright freezer at -15 degrees C Small beverage cooler below 4 C. Bar coolers below 4 C. Liquid soap and paper towels available at the hand sinks. Quats sanitizer (Graassroots disinfectant) at the dispenser tested 200 ppm. good. Quats and chlorine test strips available on site for monitoring sanitizer concentrations.
