Observation: - Food debris observed inside the designated surface sanitizer solution.
- Dirty wiping cloth stored inside the front handwashing sink.
- Significant food debris observed inside the dishwasher.
- Observed staff place dirty bowls inside the designated mop sink.
Correction: - Remake the sanitizer. Ensure to routinely change out the sanitizer throughout the day.
- Remove the wiping cloth from the handwashing sink.
- Drain and refill the dishwasher. Ensure to remove all food debris. Staff must pre rinse all cooking equipment and plates prior to placing them inside the dishwasher.
- Remove all dirty dishes from the mop sink. This is designated for dumping grey water after moping the floors.

Follow up inspection to report #DSOG-CJAUXQ:

- Kitchen was not in operation at the time of the inspection. No cold potentially hazardous food items were left at room temperature at the time of the inspection.
- Surface sanitizer in designated bin appear to be in clean condition.
- Dishwasher in clean condition. Ensure to pre-rinse bowls and cooking equipment with water prior to running them through the dishwasher.
- No dishes or cooking equipment stored inside the mop sink.
- No signs of pest activity at the time of the inspection. A copy of the pest control summary report dated September 8, 2022 provided. Call the pest control company for an assessment and control measures for cockroaches/mice.
- Sticky/glue traps installed throughout the kitchen.
- General sanitation has improved. The operator must implement monthly deep cleaning schedule.
