The following items have been corrected since last inspection:
-->Fried chicken now cooling following proper procedures: in shallow container cooling for 2 hours at room temperature then transfer to cooler for further cooling.
-->No potentially hazardous foods noted at room temperature
-->All foods are stored above ground. Operator has installed a few shelving units to keep food off the ground.
-->Areas that required cleaning are now in sanitary condition
-->Operator has replaced a beverage cooler and prep cooler by bar with new coolers. Both coolers 4oC or less noted.

Note:
Ensure to remove all cardboard and aluminum foil in facility as all surfaces must be durable, easily cleaned, and impervious to moisture.
