Corrective Action(s): Ensure mouse droppings are cleaned up and areas monitored for new pest activity. Report all pest activity to pest control company. Pest control provided by Orkin and devices on-site.
Ensure pest control reports are kept together so they can be reviewed upon request by EHO. May 2018 report review - some pest activity noted.

Line cooler was at 4 C. Thermometer was present for monitoring
Stainless steel cooler was at 3 C
Sliding door cooler was at 2 C
Freezer was at -13 C
Hot holding of pizza was 61-64C
Bleach was present for sanitizing dishes. Operator was familiar with manual dishwashing
Bleach sanitizer (100 ppm) was present in a labelled spray bottle for sanitizing food contact surfaces
Observed frequent handwashing by staff during inspection
