Observation: Tray of raw chicken left on floor of walk in cooler. Tray of bread left on floor of walk in freezer.
Corrective Action(s): Do not store any items (even in the rubber trays) on the floor. ALL foods must be stored off the floor for the purposes of:
1) Floor could be dirty
2) Allowing cold air flow to circulate underneath the foods
3) Allow for easy cleaning of floors in walk in cooler/walk in freezer

Move foods immediately.

212 - Operator has not provided acceptable written food handling procedures [s. 23]
Observation: Carton of eggs left at room temperature during inspection. Temperature at 4 deg C, chef indicated they were just brought out but there was no time tracking available.

Corrective Action(s): Eggs moved into cooler.
You must time track your eggs and any other foods that you leave out at room temperature. For example if eggs are brought out at 10AM, there should be some verification that the eggs are to be discarded by 12pm if not used. You can use a log sheet, or a dry-erase chart, or any method that will provide this verification.

In the future, if any food items are left out at room temperature and measured to be at >4 deg C, they will be discarded regardless UNLESS there is some written verification that they were brought out within the past 2 hours.

Observation (CORRECTED DURING INSPECTION): Back door open at time of inspection. Deadbolt was pushed out so that door would remain propped open.
Corrective Action(s): DO NOT keep backdoor open, this will allow flies and pests to enter your kitchen. Your kitchen exterior faces the parking lot where there are garbage bins. Therefore, it is extremely important to keep this back door closed as often as possible

Observation: Several areas require your attnetion:
1) Filthy cardboard taped to the side of the table across from the dishwasher (beside the organcs bin). Food debris was caked onto it and it appeared quite used.
2) nozzles of spray sanitizers (pink solution) were dirty
3) in and around the dish pit area in general
Corrective Action(s): 1) Remove cardboard immediately.
2) Clean your sanitizer bottles. These bottles of spray sanitizer are used for your food contact surfaces, so they must be kept clean at all times; otherwise, the dirt/grime could transfer from the spray to the surface to the food.
