Observation (CORRECTED DURING INSPECTION): Noted ground beef, cooked rice and fried noodles cooling on the counter without good time monitoring practices.
Corrective Action(s): Place food in cooler or ice bath to facilitate cooling. Done. Improve monitoring techniques by using probe thermometers to verify temps. and dedicate kitchen staff to put foods in cooling units in acceptable time. Note 60 C to 20 C in no more than (can be less) 2 hours and in the cooler to get from 20 C to 4 C in four hours.
