Observation (CORRECTED DURING INSPECTION): A very large amount of meat was being breaded - meat temp had risen to 16*C internally. Work with smaller amounts so that you can keep the food cold.

Observation (CORRECTED DURING INSPECTION): 1) Cleaning cloths are not kept in sanitizer. Keep cleaning cloths saturated with sanitizer.
2) Sanitizer sink had no detectable sanitizer in it. Ensure that sanitizer chemical is present in sanitizer sink.
