Observation (CORRECTED DURING INSPECTION): Both hand washing stations have been removed and replaced with one three-compartment sink for warewashing for the whole facility.
Corrective Action(s): CORRECTION ORDER ISSUED. Two hand sinks must be re-installed in the production area and must be equipped with soap and paper towel dispensers.
In the meantime, the three-compartment sink has been set up with liquid soap and paper towels.

Observation: - Bags of onions were stored directly on the floor.
- A few opened bags of dry ingredients were not stored in pest-proof containers.
Corrective Action(s): - Do not store any food directly on the floor.
- All food and ingredients must be stored in pest-proof containers with tight-fitting lids.
Correct by: Immediately.

Observation: Entire facility requires deep cleaning and re-organizing again.
- Baking racks, cooling racks, and cake pans need to be scrubbed clean and sanitized.
- Floors in all areas need to be deep-cleaned, including under equipment/racks and in corners.
- Doors and handles of equipment/cooler/freezer require cleaning and sanitizing.
- Dry ingredient bins require cleaning and sanitizing.
- Upstairs storage area needs to be re-organized. Remove any unused items from the facility.

Comments

- New three-compartment sink installed. Sink plugs available. Temporarily set up as a hand washing station as well.
- Facility was in production at time of inspection. **Ensure all equipment used for production is thoroughly cleaned and sanitized at the end of the day.
- Regular pest control services are still in place. Ensure to continue monitoring for activity and cleaning and disinfecting areas with rodent droppings on a daily basis.
- Labelled spray bottles available for bleach sanitizing solution, tested at 200 ppm.
- Walk-in cooler measured at 4C. Upright freezer measured at -16C.
- Deep frying area was satisfactory at time of inspection. Reminder to clean and sanitize this area at the end of each production day.
- Bay door seal still intact.
**General sanitation requires improvement. Replace any old dry ingredient bins that cannot be properly cleaned and sanitized.
